#WhatIMadeWednesday:: Peanut Butter Trail Mix Bites

I’m so happy to introduce a new part of my blog to you guys! I’ve always loved cooking and creating new things. Since being gluten free, and recently starting a plant-based/vegan diet, it’s been tricky to find recipes that tailor to my eating habits. So I’ve been experimenting with some of my old favorite recipes and re-creating them to fit my new eating style! I’ll be featuring a new recipe on Wednesdays as a part of the #WhatIMadeWednesday series including everything from sweets, snacks, and savory meals!

I love making these super simple bites to snack on through the week. They have enough sweetness to satisfy my sweet tooth mixed with protein to keep me satisfied. You can play with the recipe by adding in different dried fruits, and nuts. These are just the things I usually have stocked in my pantry!

Peanut Butter Trail Mix Bites

{Makes 8 bites} {Gluten Free | Vegan}

Trail Mix Bites:
4 Tbsp Peanut Butter Powder β†’ mixed with 3 Tbsp of water, you’ll want it to be a little more runny than normal peanut butter
4 Tbsp gluten free quick oats
1 Tbsp agave nectar or maple syrup (or honey for non-vegan version)
1 Tsp vanilla extract
1 Tbsp raisins + 1 Tbsp dried plums β†’ use any dried fruits you prefer
1 Tbsp unsalted, roasted sunflower kernels
1 Tbsp unsweetened shredded coconut

For Chocolate Coating (optional):
2 Tbsp Enjoy Life mini chocolate chips
1 tsp coconut oil

In a medium mixing bowl combine all of the bites ingredients

Form into 1 1/2-inch size bites. Set aside on a plate.

Side note: You could leave the bites at this stage and just refrigerate them, but this girl needs her chocolate.

Combine your chocolate chips and coconut oil and microwave for about a minute. I did it in increments: 30 seconds, stirred, 20 seconds, stirred, 10 seconds, done. Just keep an eye on it so it doesn’t burn.

Next, coat the chocolate over the top of the bites. You can dunk the bites in the chocolate, but I prefer to drizzle over the top, so it’s not completely covered in chocolate.

Set the bites in the freezer for 20-30 minutes, or until chocolate is set. Transfer to the refrigerator. Keep the bites in the fridge to prevent from melting.
