“Snickers” Rice Crispy Treats

I am warning you, these are addictive. But be careful, these aren’t considered a light & healthy dessert.

I’m not the best at making desserts, but it’s kind of hard to mess this one up, that’s why it’s one of my favorites!

For me, it’s sometimes hard to find desserts that are truly decadent and that are vegan + gluten free. These hit every sweet craving you could have. They’re crunchy, gooey, and rich, and pretty easy!

“Snickers” Rice Crispy Treats

Makes 9 big squares {Gluten Free | Vegan}

Crispies:
1 1/2 tbsp vegan butter20 vegan marshmallows (I used these)
3 cups puffed rice cereal (you can use regular Rice Krispies if you only have a gluten sensitivity, but I used these)
1/4 cup vegan chocolate chips (I used these) + 2 tsp. coconut oil
1/4 cup peanut butter powder + 3 Tbsp. water (or 1/4 cup regular peanut butter)
1/4 cup unsalted peanuts

Vegan “Caramel” Sauce:
7 0z. coconut milk
1/2 cup coconut sugar
1 tsp. vanilla extract
1 Tbsp. maple syrup
2 tsp. coconut oil

Directions

In a pot, start by melting the butter on low heat. Once the butter is melted, add in the marshmallows until gooey and melted, stirring occasionally.

Stir in cereal, being gentle not to mash up the cereal.

Place the crispy mixture into a 9×9 pan, pressing down into the pan with a piece of parchment paper to avoid getting the mix stuck to your hands. Allow to cool for 15 minutes.

While the crispies are cooling, start making the caramel sauce.

Add in the coconut milk, sugar, and maple syrup to a pan over medium-high heat.

 Bring to a boil, then reduce heat to medium-low and let bubble for 15 minutes, whisking pretty frequently so it doesn’t burn.

Once the sauce has cooked for 15 minutes remove from heat and whisk in vanilla and coconut oil.

Pour the sauce into a mason jar, and allow to cool.

Once everything is cooled, you can start layering.

First layer→ Start with the peanut butter mixture.

Second layer→ spread over your chocolate mixture → add your chocolate chips + coconut oil into microwave safe bowl. Microwave 30 seconds, stir, 20 second, stir, 10 seconds, done.

Third layer→ spread your cooled caramel sauce over the top.

Lastly, sprinkle crushed peanuts over top → I put them in a Ziploc bag, and used a rolling pin to crush them.

Let sit for a little while for the caramel sauce to set on the crispies. 

Cut into 4×3 inch squares, feel free to make them smaller.
