Peanut Power Bowl

I’m a carb kinda girl. This bowl gets you your healthy carbs, so you feel full and satisfied. I love eating this bowl after a workout to keep from feeling drained, and keeping my energy up for the rest of the day.

Peanut Power Bowl

Makes 2-3 servings {Gluten Free | Vegan}

1 med. sweet potato
1 can chickpeas, drained & rinsed
1/4 cup mushrooms, sliced
1/4 cup frozen edamame, shelled & thawed
2 cups brown rice
1 bag of frozen, steamable broccoli florets (about 1 1/2 cups
Unsalted, roasted peanuts

Peanut Sauce:
3 Tbsp. Gluten free soy sauce or low-sodium soy sauce
2 Tbsp. Peanut butter powder or reg. peanut butter
1/2 Tbsp. siracha sauce
3 dashes of Worcestershire sauce
1/4 tsp. garlic powder
1/4 tsp. onion powder
2 dashes of ginger powder
1 Tbsp. maple syrup
* I make additional sauce for drizzling over top


Start by peeling & cutting sweet potato into chunks. On a baking sheet with tin foil, toss the potatoes lightly in oil. Roast in a 350 degree oven for 15-20 minutes, or until they give a little but are still a little firm.

In a skillet with oil, start by sautΓ©ing the mushrooms and edamame until tender.

Cook your broccoli accordingly. Add into the saute pan along with cooked sweet potatoes.

Turn off heat. Prepare your sauce and stir into sauteed veggies.

Layer veggies over prepared rice. Drizzle the bowl with additional peanut sauce.

I garnish my bowl with peanuts and a cabbage “coleslaw” mix for some crunch and freshness.
