My Favorite Vegan Tacos

BONUS RECIPE!

Two recipes for this week, I hope you guys don’t mind!

I eat these tacos about 2-3 times a week. I love them because they’re so fast and filling, without being heavy or greasy. They’re perfect for a light, GF, Vegan Cinco de Mayo meal!

My Favorite Tacos

Makes about 4 tacos {gluten free | vegan}

1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp basil
1/2 tsp paprika
1/4 tsp cumin
1/4 tsp cayenne (optional)
1/4 tsp salt
1 green pepper, sliced
About 4 mushrooms, sliced
1/4 cup (about 5 oz) of tomatoes and green chilies + 1/4 cup liquid
1/2 cup vegan meat crumbles → I use this gluten free brand
Tortillas (corn for gluten free option)
Vegetarian re-fried beans, warmed (optional)
Vegan mozzarella cheese (optional garnish)
sliced cabbage (optional garnish)

Directions

In a sauté pan over medium-low meat, saute your peppers and mushrooms in oil.

Sauté for about 10 minutes, until slightly tender.

Add in frozen meat crumbles, spices, and tomato/green chili + liquid. Cook for another 10 minutes until peppers until softened. If the mix starts drying out, add in about 2-3 tablespoons of water, and you’ll get a good taco sauce.

Start assembling your tacos.

I assemble mine by spreading heated re-fried beans on the tortilla. Then, the taco mix, vegan cheese, and shredded cabbage. Feel free to add whatever you please!_MG_8755
