Vegan Dirty Rice

Being from Louisiana dirty rice is found on every menu in restaurants. I veganized this delicious rice dish, so I could still enjoy the amazing Louisiana food, while being gluten free and vegan. 

Vegan Dirty Rice

serves about 4-6 servings

1 red bell pepper, chopped
1 green bell pepper, chopped
1/4 cup white onion, chopped
2 celery stalks, chopped
4 cups cooked rice, I used Jasmine
1 can dark red kidney beans, drained and rinsed
1 cup unsweetened plain almond or soy milk
2-3 tsp. Cajun seasoning or to taste, depending on your spiciness preference (I use this salt free kind)
salt and pepper to taste
2 tsp garlic powder
2 tsp chili powder
2 tsp onion powder
1 cup frozen vegan meat crumbles (I use this gluten free kind)


Make your rice according to directions before hand.

Start by sauteing the peppers and onion over medium heat until onion is translucent and peppers are starting to soften. I sauteed the veggies with water instead of oil. Start with little then just add 1/4 cup more, as the water gets soaked up, I did this about 3 times.

Once veggies start softening, add seasoning.

Add in meat crumbles and celery. Cook until meat crumbles are cooked through and thawed and celery is tender.

Add your almond milk and kidney beans.

Cook until liquid has thickened.

Once the liquid has thickened stir in your rice and serve.
